Seared scallops. Celebrating a successful mediation that was grueling, but resulted in an amazing settlement. One of my best ever. I have been stressed lately, and this was a great reminder that I am pretty good at what I do. I hope you all had a day worth celebrating.

For being a Canadian Maritimer, I am not a big seafood person.....I could eat fish and chips for DAYS, but aside from that? Meh! Corn chowder is my favorite chowder I think!

No pictures, but I cooked up a steak and asparagus. Came out well.
Also made some marinade and have a bunch of chicken preparing to be grilled tomorrow.

I made a forbidden rice bowl with roasted cauliflower, shallots, carrots, garlic, ginger, kale and lime. Paired it with a Scottish Red Ale.
Seared scallops are my favorite. There’s a Jamaican place I go to with awesome seared scallops.

Since nobody has posted a new thread, I made dinner last night as well. It was pollo asado using a marinade recipe I found online (first try). It came out pretty good.
